The grapes were harvested at optimal ripeness for sparkling wine, with low sugar and high acid. They were then softly pressed to avoid extracting tannins from the skins. After considerable time "en tirage", the resulting sparkling wine is smooth and creamy with a perfectly balanced mouth-feel. Light cream in color, this sparkling wine blossoms in your mouth with lively acidity. The nose detects yeasty bread. Its many tiny bubbles refresh with green apple and crisp citrus notes.
